Jenn Barry's Lactation Cookies
Adding walnuts is a huge win if you like them. Suggestion is to make a bunch raw, roll them up in balls and freeze and then, when you want a fresh baked cookie, throw a dozen on a cookie sheet and bake.
3 cups old-fashioned rolled oats
3 cups unbleached organic all purpose flour
5 tbs Brewers yeast
1 tbs wheat germ
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 boxes cook n serve vanilla pudding
3 tbs flaxseed
5 tbs water
1 1/2 cup sugar
1 cup brown sugar
2 sticks of butter
2 teaspoons vanilla extract
2 bags of ghiradelli milk chocolate chips (my husband argued it was too much chocolate.. I think it was just right!)
Preheat oven to 350 degrees.
Mix together water with the flaxseed and let set for 3 minutes.
Mix together softened butter, eggs, brown sugar, sugar, and vanilla extract.
Mix in the flaxseed.
In a separate bowl, mix together oats, flour, wheat germ, Brewers yeast, salt, baking powder, oats, baking soda, pudding mix and cinnamon.
Add the flour mixture in a cup at a time to the sugar mixture.
And finally, add those bags of chocolate chips. I'm going to try making mine with walnuts also next time.
Roll into 1 in balls and place on cookie sheet. Cook for about 8 minutes.
